How To Sharpen with a Gatco Double Diamond Hone

Please note: Always sharpen by pushing the blade away from you.

1. Tilt your knife at a 20 degree angle with the cutting edge facing away from you.
2. Push the knife away from you, maintaining the 20 degree angle. Repeat that stroke two or three times.
3. Hold the knife in your opposite hand to sharpen the other side of the blade. Tilt the knife at a 20 degree angle. Stroke away from the body and hands.

Important: Take the same number of strokes on each side of the knife. Push the blade as though you were trying to shave off a slice of the hone.
